FIRST there were rainbow bagels, then came the rainbow grilled cheese and rainbow pizzas. The technicolour food trend has struck again.

The latest victim? Rainbow coffee, proving that nothing is sacred these days, but it sure is pretty.

A barista in the United States has taken the multicoloured craze into the beverage realm, and is racking up some serious Instagram likes with his drinkable works of art.

The man behind the magic, Mason Salisbury, who works at hip coffee shop Sambalatte in Las Vegas, explains that he adds food colouring to steamed milk in order to create the dreamy designs.

Salisbury admits that pouring the rainbow-tinted steamed milk in sweeping lines with precision “takes a lot of practice” but it’s also an easy way to teach other baristas the technique without wasting precious espresso.

“I used to do it on holidays a few years ago but I saw it again and thought, why not show everyone on my Instagram that it can be used to train baristas in latte art without wasting espresso,” Salisbury told news.com.au.

“[Espresso] is expensive to practice in, so this way it’s more practical and it’s fun.”

It also looks pretty fun to drink.

But does it taste the same?

“Some customers like it and some don’t,” Salisbury said of his creations. “I wouldn’t want it in my cappuccino because I think it ruins the coffee for me but if you like I’ll make it great for you. It’s just fun to see people’s reactions to it.”

He also has plans to create an organic version in the coming weeks.

Check out the videos of Salisbury doing his thing below. It’s so mesmerising, we could watch it all day.
