MasterChef dessert the ‘golden crackle’ described as ‘torture’

In the MasterChef finale, top chef Peter Gilmore set the near-impossible pressure test that included the new ‘golden crackle’ dessert.

Peter Gilmore, chef at Bennelong and Quay in Sydney, presented the MasterChef finalists, Pete, Kishwar and Justin, their final challenge.

It’s the ‘golden crackle,’ his brand new dessert from Bennelong. It’s very new, because it’s not yet on their menu online.

“It took three months to develop ... there’s a lot of complexity in there, and I’m sorry in advance,” he tells the contestants.

The three get to taste test the dishes they’ll be making - and take a look inside the mysterious golden crackle.

“The golden ball is hiding a lot of pain inside there,” says Kishwar.

“The golden crackle dish, it’s just this perfectly shaped gold dome on a plate. I’m dreading to find out what is under that,” says Justin.

So what is inside?

It’s filled with rice crispies, which have to be “hand-coated individually in four different chocolates.”

There was also an additional six layers of chocolate cake, mousse, whipped caramel cream, prune jam, salted oloroso caramel and dark chocolate ganache inside it. All need to be made in separate recipes and then layered together.

As for the golden dome, it’s made from a potato starch sheet, and gold leaf.

“There’s a little bit of work ahead of you guys,” teased Peter.

The contestants described it as “terrifying.”

“Thank you so much,” said Justin, almost sarcastically.

“You won’t be thanking me later,” laughed Peter.

As expected, fans were absolutely loving the fancy spin on the Aussie classic.
