Nanny state's guide to safely eating democracy sausages 

It’s a voting tradition in Australia: the Democracy Sausage. But while cooking a snag and slinging it in a slice of bread sounds easy, the Food Safety Information Council has guidelines for vendors to make sure voters don’t get a bout of Democracy Gastro on Saturday. Here are some of them.

Slept-in clothes with traces of Friday night's beer and pizza binge might be passable attire for walking into a voting booth and deciding the fate of a nation, but not for the important stuff on Saturday.

Wear clean clothes and apron

Check the sausages are cooked to at least 75°C. Failing that, just cook the snags until they’re this side of charcoal. Remember, sauce distracts from everything. It's the fast rail of the culinary world.

Use a meat thermometer

Don’t put cooked meat or poultry back in the same container that raw meat or poultry has been in. That’s riskier than trying one of ScoMo’s chicken curries.

Use separate containers

Wash utensils and other equipment in hot soapy water and dry thoroughly before using them again. Just pretend it’s a policy idea from five elections ago that needs a freshen up for public consumption.

Keep your equipment clean

Use soap and dry thoroughly after handling raw meat or poultry, going to the toilet, blowing your nose, shaking hands with a politician, or any of the other hundred gross things a human might do on Saturday.
