A TOWNSVILLE baker has fired up his passion for pastry and branched out on his own to open his first bakery.

Dimitri Pittion-Rossillon opened Artisan Bakery earlier this month in Cranbrook on Brampton Ave.

The 36-year-old said he became a baker 15 years ago.

“There are a lot of places I have worked in the past so I have been able to develop my recipes,” he said.

“Baking is a lot of fun and about trial and error.”

The Cranbrook local rides his bicycle to work every morning to get the ovens on at 3am.

Growing up in France before moving to Townsville, Mr Pittion-Rossillon said opening his own bakery was a great feeling.

“It is really nice to be able to just have the freedom to make whatever product you want,” he said.

“Everything is made fresh in the morning from scratch using quality local ingredients.”

Artisan Bakery features up to 25 different products including fruit tarts, cakes, pies and gluten free options with bread to be made on-site in the future.
