Townsville’s food scene is buzzing with a new obsession — the croffle.
A croissant-waffle hybrid that took Asia by storm, this crispy, pillowy delight combines the buttery richness of a French croissant with the crispy texture of a waffle, which is baked to perfection in a waffle iron.
And now it has finally landed in North Queensland, thanks to chef couple Marvin Lipana and Bernadeth Halog, the masterminds behind Migoo “The Croffle House”.
What started as a humble tent at the Willows Sunday Markets six months ago, Migoo has quickly turned into a must-visit stall.
While they didn’t invent the croffle, they’re putting their own spin on it, crafting bold flavours that keep locals coming back for more.
Fan favourite toppings include Nutella with roasted almonds and the vibrant strawberry-pistachio combo.
But it’s not just about the croffles. Their drinks have become a bit of a hit, too including the strawberry matcha latte, ube (purple yam) latte, matcha latte, iced dalgona latte, and pistachio matcha latte.
As their popularity soared, Migoo also started going to the Strand Night Markets.
“When we started at the Strand Markets, we were shocked — we sold out in hours!” Bernadeth recalls.
“People kept coming back, saying, ‘Where have you been all my life?’”
The demand pushed Bernadeth to quit her job and go all in about three months ago.
“Luckily, we’re making enough to cover everything and even expand,” she said.
That expansion is already in motion, with a food van now rolling out more croffle goodness across Townsville.
But Bernadeth said her ultimate dream was to open a cafe of their own one day.
“I love breakfast, so opening a cafe is the goal,” she said.
You can catch Migoo The Croffle House at the Willows Rotary Markets on Saturdays from 7.30-11.30am, the Strand Night Markets from 5pm to 9.30pm on the first Friday of every month, and the Cotters Markets on Sunday from 8am-12pm.
