Adelaide’s eastern suburbs is set to welcome its latest takeaway hotspot – a new pizzeria whose owners believe they have what it takes to deliver “the best” pizzas the state has seen.

Rosie’s Pizzeria co-owners Nicholas Norton, 23, and Jose Baron, 38, will open for business this Friday at Kensington Gardens’ Erindale Shopping Centre – boasting an opening day, lunchtime special of $12 margherita pizzas from 12pm until sold out. They will also re-open at 5pm for their primary operating hours.

Mr Norton said running his own business alongside Mr Baron – a well-renowned chef with experience in Australian, Argentinian and Italian kitchens – was “a dream come true”.

“It’s an amazing thing – it’s also a big leap,” he said.

“I’m feeling good about it, I’m confident and I’ve got the right business partner. Everything is in place, I think, for us to succeed.

“There’s a lot of stuff happening around here (eastern suburbs) but I think we’ll bring even more people to this spot. It’s really, really busy and there’s a lot of action.

“Our product is 100 per cent the focus. We’re so confident in our product that we want everyone to try it – as many people as possible – because we’re just so confident they’ll come back.”

Rosie’s will primarily operate as a night-time takeaway pizzeria – fitted with a gold-plated oven imported from Italy and a glass-windowed open prep station so customers are able to “see the full process”.

The pair are also planning on setting up workshops to teach people how to make their own pizzas; as well as catering events with an eye on “sneaking a spot” at the Fringe in the future.

Mr Norton told the Advertiser he believes Rosie’s has the potential to “eventually be the best” pizzeria in Adelaide.

“Another thing that will be quite good is we’re going to be making our own gluten-free bases from scratch,” he said. “I do hear a lot of whispers that there’s not much of that going around, so we’re really focusing on everyone getting a pizza.

“We’ve got the right set-up – the oven is from Italy, we chose the perfect stone to slide pizzas across … Sometimes you can’t get customers through the door but I think with a strong product, Jose and I are very confident with what we’re doing.

“We’ve got some seriously cool things coming – flavours Adelaide needs.”
