REGIONAL culinary masters are now able to register expressions of interest in the 2021 Darwin International Laksa Festival, with a new category added to the delicious event.

The Best Regional Laksa category is open to vendors that operate outside of Darwin, Palmerston and Litchfield.

Now in its third year, the month-long festival is a celebration of the Top End’s multicultural community and love for the Malaysian spicy noodle soup. Laksa lover Lewis Mulholland was eager to sink his spoon into all of this year’s delicious options.

“I love a spicy soup and I can’t wait to try all the difference soups from the vendors,” he said.

“You want a real depth of flavour, the sweet of the coconut and the spices you can’t quite put your finger on.” Mr Mulholland said his go-to was Mary’s Laksa at the Parap Markets.

Chief Minister Michael Gunner said the festival helped encourage business during the NT’s traditionally quiet season. The food tour begins on November 1 and the celebration wraps up on November 28 with the official festival day.
