A new restaurant and beach club is set to redefine coastal dining on the Gold Coast.
Haven at new Burleigh Heads hotel Mondrian will open next month and features a pool club, private cabanas and sunset bar.
The venue, led by executive chef Aaron Teece, is set to combine luxurious ocean views with a produce-driven menu.
It will use local seafood from Cairns, the Sunshine Coast and northern New South Wales as well as meats and seasonal produce from the hinterland.
Teece said he wanted diners to “feel the season and the source with every bite”.
“When ingredients are respected, simplicity speaks loudest,” he said.
“We’re not trying to overwork anything.
“The quality of the produce does the talking.
“It’s all about creating food that feels grounded but still sparks a sense of occasion in this beautiful part of the world.”
Teece described his menu as polished but approachable with share plates and fresh flavours.
Guests can expect an extensive champagne collection, both Australian and international wines, coastal-inspired cocktails and a dedicated agave menu featuring tequila, mexcal, raicilla and bacanora.
Haven will welcome diners from June 5.
