Change of owner at North Hobart wine bar, Willing Brothers

In a city known for funky wine bars and immaculate eateries, it is no small feat to be a trailblazer of the industry. Now, a Hobart wine bar will welcome new owners. Why the old owners decided to step back.

In a city known for funky wine bars and immaculate eateries, it is no small feat to be a trailblazer of the industry.

James Kingston and Carl Windsor, co-owners of Willing Brothers in North Hobart, have made the tough call to end their association after nine years.

Mr Kingston said when he was first planning to open the bar, it took all of 15 minutes to convince Mr Windsor to come on board.

“We had the same vision of what it would be, even in the renovation process,” he said.

“In nine years of business I think we’ve maybe had two small disagreements, so in terms of business partners we’ve basically been a perfect match.

“It’s some yin and yang energy between us, which has served us well and it’s meant that we’ve enjoyed every minute of running it.

“There’d be nothing worse than leaving because we feel like we have to – we’re definitely still enjoying it, but I suppose the lifestyle isn’t suiting us anymore and we’re ready for a change of pace.”

The pride of running a successful and loved bar was something Mr Windsor said he would never forget.

“We’ve turned around now and we’ve done so much, but there are so many great new operators moving through – it’s time for them to take the mantle and do something amazing with it,” he said.

“We’re getting a bit older and these younger people who have the energy and a great understanding of the industry are coming through at the moment which is really cool.”

After “loving every minute” of running Willing Brothers, the pair praised their loyal customers.

“We certainly have to thank everyone for coming in and supporting us, and for all of the staff who have worked for us – everyone really contributed to the rich tapestry of what Willing Brothers has become,” Mr Kingston said.

“We’re really happy with what we’ve done and where we’re at and both excited for the next chapter.”

The new owners of the space plan to maintain the groovy atmosphere of the space and honour the legacy Mr Windsor and Mr Kingston have built and left behind.

Also owners of Society in Salamanca, Ms Nichols said they had plenty of plans for the bar and were excited to get started.

“We very much want to retain the vibe of the place, just add our own touch and freshen it up a bit,” she said.

“We initially weren’t looking to open up another place, but this was an offer that was too good to refuse.

“It’ll stay a welcoming, fun bar full of great wine and food.”
