Bread flour tends to create a dense, heavier batter, making it less suitable for banana bread. Instead, we recommend that you use alternatives such as all purpose flour, self-raising flour, or even whole wheat or spelt flour.
When should you not use bananas for banana bread?
The way you’ll know if a banana is ready to be turned into banana bread, is if it is close to black in colour, or at least streaked with black.
