MASTER brewer Dan Dainton has some advice for those sampling his latest drop — be warned.
Dainton’s new ‘Big Bad Bourbon Barrel-aged Belgian Barley wine with Rye’ is officially a beer.
But it’s a beer unlike any other.
“It’s quite sweet, bourbony, and some sherry-like notes will come out as it ages,” Dainton said.
He imported bourbon barrels from the US to age the beer for six months.
“Instead of using the normal yeast we have used Belgian yeast,” he said.
“We wanted to make something that was different. It’s 14 per cent alcohol.”
Dainton has entered the brew in national and international competitions.
The brew is available to Dainton Brewery, Carrum Downs, for $20 a can or $10 per glass.
