YOU’D be mad not to check out this new cafe in Croydon.

Mark Andersen, Dan McDonald and Alex Roberts have opened Mad Ram Cafe in Paul St.

The cafe’s name is a mixture of the first letters of their first and surnames.

Mr Andersen and Mr McDonald are both chefs and have worked for 10 years to open a cafe together.

They are serving breakfast and lunch using quality ingredients from local suppliers, and said they took a lot of pride in their food.

“Being chefs, we don’t want to put our names on anything we’re not proud of,” Mr Andersen said.

“The beauty of us is we’ve been chefs between us for almost 40 years ... and we care about everything; the coffee, the service, the food.”

A $10 deal of an egg-and-bacon toastie, using Burnham Bakery bread, and a coffee has proven a hit for breakfast.

They also offer the “Mad Breakfast”, their version of a big breakfast which includes handmade sausages and hash browns; and a wild mushroom dish, which has seven types of mushrooms.

The cafe is open from 6am to 4pm Monday to Friday and 8am to 4pm on weekends.
