A Mildura distillery has opened up a new venue in Melbourne’s north. Find out what they’re pouring.

Mildura distillery Fossey’s has officially opened a second location in inner city Melbourne.

The Carlton premises primarily offers Fossey’s award winning gin, but it also has a selection, vodaks, rum, moonshine and whiskey.

Fossey’s distillery has called Mildura home since 2017 but the family behind Fossey’s has been entrenched in the community since the early 1900s.

The family’s original venture was a plot of land just outside of town that would eventually become the iconic timmis speedway.

Initially intended as a “bit of fun,” Fossey’s has since grown into something more, according to owner Steve Timmis.

“We started Fossey’s as a little bit of fun — something we could do a day or two a week with a focus on tourists coming into the cellar door, online sales, and just having a great time doing something we loved,” he said.

The distillery has gone on to win a number of awards since then, including the tourist choice award for their venue and their gin has a “gold medal status”.

During the pandemic, Fossey’s manager and daughter to Mr Timmis Cherie Gowers began to discuss the possibility of opening up another venue.

“Opening another venue had always been a conversation that quietly tinkered in the background. We had considered other regional towns, but Melbourne hadn’t been considered until during the covid years,” she said.

“We could not pass up the opportunity to bring a little of their Fossey’s flair to the big smoke.”

Mr Timmis said this was a fantastic business opportunity.

“Being located in Mildura, we’ve always been geographically challenged, it made attending metro events and supplying wholesale customers extremely challenging … But now with a Melbourne based venue, we are able produce and sell with more ease and also enjoy the company of Melbourne based customers,” he said.
