He was drafted to North Melbourne from the Eastern Ranges in 2010 and went on to play 81 games with the Roos.
Mullett, 26, spent this year at Carlton, adding another eight matches to his tally.
His recruitment gives big-name lift-off to the Mustangs, who battled in Division 2 this year.
Coach Health Black has stood down and been replaced by his assistant Bret Lavars, a former star player with Dingley in the Southern league.
“Aaron brings a wealth of experience,’’ Mooroolbark said in a statement.
“With a young developing list and new coaching panel, his AFL knowledge and work ethic will be invaluable. Aaron will be a playing assistant coach for the 2019 season.
Mullett said: "The opportunity to come home to where my junior footy started and have an influence on the young kids, play with close mates I’ve got there and also work with the new coaching staff really appealed to me.’’
SHARKS EYE NEW COACH
Meanwhile Division 1 club Doncaster is expected to name former Noble Park champion Stewart Kemperman as its new senior coach, replacing Andrew Tranquilli.
The Sharks sounded out Kemperman after his surprise departure from Berwick at the end of the season.
As a non-playing coach he led the Wicks to the 2017 and ’18 premierships in the South East league, only to part ways with the club last month.
At the time Kemperman told Leader he was comfortable with what he called an amicable decision.
Berwick replaced him with its former premiership coach Rhys Nisbet.
Tranquilli stood down after the Sharks’ straight-sets exit from the finals this year. He had taken Doncaster from Division 3 to Division 1 with a pair of premierships.
Kemperman, renowned for his lethal left-foot kicking, retired from Noble Park at the end of the 2016 season.
He played in the Bulls’ 2010-11 flags and was named in their best Eastern league team.
