Prince Public Bar to call first drinks in December after major renovation

It closed for major renovations in April but now this beloved 82-year-old St Kilda pub is set to reopen, offering simple pub fare morning, noon and night.

A popular St Kilda watering hole will be back in action in time for summer — and fans can expect to taste old favourites and new offerings.

The Prince Hotel is calling first drinks in early December following an eight-month renovation.

The new design, by IF Architecture’s Iva Foschia, pays homage to the bar’s art deco heritage and the bayside suburb’s colourful character.

For those who fancy pub grub without the frills, the Prince Public Bar will be open for breakfast, lunch and dinner.

The menu, by executive chef Dan Hawkins and head chef Dan Cooper, will allow locals and tourists alike to graze on quality food and booze from morning to night.

The Prince signature roast series will return, offering a daily changing rotisserie, while other dishes include the beef burger and dry aged ribeye steak.

The transformation will see the long oval front bar reinstated to its original location, alongside an expanded kitchen and spacious dining areas.

An internal staircase will connect the bar directly through to the Hotel Lobby and Prince Dining Room.

Prince Public Bar is known as one of Melbourne’s longest standing LGBTQIA-friendly bars, having embraced people from all walks of life since its opening in 1937.

The Prince Hotel has an eclectic musical history, renowned as the epicentre of Melbourne’s punk rock scene in 1980s, while the Prince Bandroom has played host to countless international acts.

And while the reopening will bring new life to the landmark venue, it hasn’t lost sight of its playful past.

Managing director Andrew Ryan said the relaunch of the Prince Public Bar represented a vital moment in the rejuvenation of their corner locale, as well as the wider suburb.

“The Prince Hotel has established itself as a proud mainstay of St Kilda’s landscape for generations, and the transformation invites a new wave of St Kilda locals to discover this iconic venue,” he said.

“We’re bringing back the quintessential St Kilda local, providing a place where people can return two, three times a week and bring their family or a first date.

“It’s a place where is everyone is welcome, just as it always has been, and we’re excited to see how Melbourne responds to it.”

A new offering will be available for wine aficionados when Little Prince Wine launches in February.

Specialising in boutique and premium wines, with a particularly strong offering of Burgundy, you can buy bottles to take home or taste them on-site in the wine bar or intimate underground cellar.

An in-store deli will supply a limited selection of delectable pre-prepared meals to grab and go.

The venue also includes a 39-room boutique hotel, Aurora Spa and the popular Rain Room immersive experience located on the rooftop.
