It’s the first Coles supermarket to include kosher sushi and convenience meals, plus a kosher coffee machine.
Store Manager Daniel Calleja said the specialty items were all about meeting the needs of nearby residents.
“The store will have an expansive kosher range as well as everyday items our customers love such as bread, milk, sushi and sandwiches, fresh fruit and vegetables and household essentials,” Mr Calleja said.
Coles spokeswoman Meg Rayner said the company wanted people to have access to products that reflected their cultural tastes — including crocodile tail in Western Australia, kosher food in Jewish communities, and baked in-store flatbreads for Middle Eastern and Asian communities.
Open at 168 Hotham Rd, Ripponlea, from 6am to midnight.
