There could be a new beer brewery on the cards for Ballarat with a proposal before the council for a microbrewery and small-scale bar.

A private agreement could result in a microbrewery and small-scale bar running out of a Ballarat airconditioning warehouse.
A development application is before the City of Ballarat for a proposed brewery at 29-31 Coronet St, Wendouree, where there is a large industrial shed used by an aircon installation and repair company.
Documents indicate a beer brewery, to be known as Green Fox Brewery if approved, would operate in underused spaces within the shed, thanks to a deal struck between the two businesses.
A 10m by 5m production area already contains two fermenters capable of producing 400l of beer a week, with the possibility of doubling the equipment and output, with which proponents hope to supply Ballarat venues and shops.
A small room would be designed as a sales and lounge area, and a single table with four chairs would allow consumption of beer on-site for a maximum of eight people.
The brewery’s proposed open hours are 4pm to 7pm Monday to Saturday.
“This brewery will have limited productions runs,” planning documents said.
“The business model involves the brewer selling kegs or cans of beer directly to outlets such as local restaurants and some bottle shops.
“However, the brewer is also aware of interest from persons seeking to purchase beer directly from the site (either cans or kegs).
“This may be from surrounding industrial workers seeking to make a purchase after work.”
The plans must be approved by the city to go ahead.
