Paul Dimattina says it’s “harder than ever” in the hospitality landscape but he’s continually finding innovative new ways.
In his latest move, the former footballer and publican has renovated his South Melbourne institution , Lamaro’s Hotel, and given it an outdoor makeover.
The modern marquee will be affectionately known as the birdcage.
“No doubt things are getting tougher and you’ve got to stay above the curve,’’ Dimattina said.
“As we saw with Gingerboy closing, it’s harder than ever and you’ve got to be smart in what you do. We are trying to align ourselves with that boutique VIP feel of the races.
“It looks spectacular and is a really beautiful space, keeping in theme with the beautiful art deco of the heritage listed building.”
Dimattina said the facility took three months build and he will officially launch the venue’s new addition on Sunday.
After a difficult period through Covid he says the support of the neighbourhood and local council had been immense.
“Kudos to the City of Port Phillip who have been fabulous in ticking it off,’’ Dimattina said.
“We’re the heart of the community and we give back. This also employs more people and it’s a good time for us. The response has been awesome already.”
