INGREDIENTS

3 cups self-raising flour

3 tbs. butter

1 1/2 tsp salt

3/4 cup tasty cheese grated

2 garlic cloves crushed

1 1/2 cups milk

METHOD

1. Preheat a fan forced oven to 220C.

2. Sift flour and salt and rub in butter.

3. Stir in cheese and garlic.

4. Make well in centre and pour in milk and knead lightly.

5. Cut into portions and brush with milk.

6. Place onto oven trays and bake for 10-20 minutes.

HAM AND CHEESE PIE MAKER PUFFS

INGREDIENTS

16 slices thick white bread

250g mozzarella cheese, sliced

160g thinly sliced smoked ham

3 eggs, lightly whisked

1/2 cup milk

Chopped parsley, to garnish

METHOD

1. Use a 7cm cutter to cut 16 rounds from the bread.

2. Place the cheese and ham on half of the bread rounds. Top with the remaining bread rounds.

3. Whisk together the eggs and milk. Place each round into the egg mixture for 5 seconds to soak.

4. Transfer to a pie maker. Repeat with 3 more rounds. Turn on the pie maker and close.

5. Cook for 7 minutes or until golden and cooked through. Transfer to a plate.

Repeat with the remaining bread rounds. Sprinkle with parsley to serve.

INGREDIENTS

700g potatoes, peeled

40g butter, melted

1 egg, beaten

1 cup grated tasty cheese

100g ham, finely diced

1 tbs. self-raising flour

A pinch salt and pepper to taste

METHOD

1. Preheat oven to 210C. Grease two 12-hole patty pans.

2. Grate potatoes, then use your hands to squeeze out any excess liquid and drain. Place the drained potatoes in a large bowl. Season well.

3. Add butter and egg and stir to combine. Stir through cheese and ham and fold through flour.

4. Spoon mixture into prepared tins and bake for 20 – 25 minutes until crispy and golden.

5. Use a knife to loosen around the edges and release puffs. Serve hot with tomato sauce and mayonnaise.

MAC AND CHEESE ZUCCHINI SLICE

INGREDIENTS

1 1/2 cups macaroni cooked

2 zucchinis

1 cup ricotta

1 cup cheddar cheese

1/4 cup olive oil

4 eggs

1 cup self-raising flour

1 tsp salt

1/4 cup cheddar cheese *extra

METHOD

1. Preheat oven to 180C. Grease a 20cm x 30cm baking dish and line it with baking paper.

2. Put the cooked pasta, zucchini, ricotta, 1 cup of cheddar, oil, eggs, 1 cup self-raising flour and salt into a large mixing bowl and mix with a spoon until combined.

3. Spoon the mixture into the baking dish and sprinkle the top with the extra cheddar cheese.

4. Bake in the oven for 40 minutes or until golden and bubbling on top.

5. Allow to cool and then cut into squares.

NOTES

You can throw extra vegies into this yummy slice, whatever you can grate, chuck it in. You can also use parmesan on the top for extra crunch. Don’t scrimp on the salt in this recipe as it can be bland without it.

CONDENSED MILK LEMON TART

I NGREDIENTS

1 1/2 sheets frozen shortcrust pastry

395g tin condensed milk

2 eggs

2 egg yolks

1 tbs. lemon zest

1/2 cup lemon juice

Whipped cream to serve

METHOD

1. Preheat oven to 180C. Line a 24cm loose-bottomed flan tin with defrosted shortcrust pastry. Place in the freezer for 10 minutes to rest.

2. To blind-bake, top pastry with a sheet of baking paper and pour in some rice or lentils to act as weights. Bake for 10 minutes. Remove baking paper and rice, then return to oven for a further 5-10 minutes until pastry is golden and cooked through.

3. Reduce oven temperature to 160C. Meanwhile, in a medium bowl, whisk together remaining ingredients until smooth.

4. Pour into pastry shell and bake for 25-30 minutes until just set.

5. Allow to cool, then remove from tin and slice. Serve with whipped cream.

INGREDIENTS

225g milk coffee biscuits

375g condensed milk

2 cups coconut

1/2 cup lemon juice

METHOD

1. Place a layer of biscuits in a slice pan.

2. Mix together condensed milk, coconut and lemon juice.

3. Pour mixture on top of biscuits. Add another layer of biscuits on top.

4. Refrigerate and slice before serving.

INGREDIENTS

500 g margarine

1/2 cup caster sugar

250 g choc bits

250 g white choc bits

400 g condensed milk

5 cups self-raising flour sifted

METHOD

1. Preheat oven to 180C and grease and line 4 baking trays.

2. In a very large bowl, with an electric mixer, cream margarine, sugar and condensed milk until light and creamy.

3. Add sifted flour and choc bits. Mix well by hand.

4. Roll tablespoons of mixture into balls, place on trays and flatten slightly.

5. Bake for 14-16 minutes or until light golden brown.

6. Allow to rest 5 minutes before removing to cake racks.
