Chef to rich and famous on hand for Gold Coast Commonwealth Games

AN AUSTRALIAN chef who has cooked for the likes of Margaret Thatcher, the Queen and Kate Moss has curated a uniquely Australian menu for some of the Commonwealth Games’ most high-profile guests

AN AUSTRALIAN chef who has cooked for the likes of Margaret Thatcher, the Queen and Kate Moss has curated a uniquely Australian menu for some of the Commonwealth Games’ most high-profile guests.

Dishes including crocodile with peach and plum, teriyaki crocodile and kangaroo loin will be served throughout the Games at the Longines Record Club.

The venue will host star-studded invite-only events attended by the likes of Simon Baker, Peter Beattie, David Koch, Sam Armytage, Ben Roberts-Smith and Michelle Payne.

“I know when I travel I love to experience the food. I’m sort of giving guests here that opportunity,” said chef Aaron Teece, who described crocodile as “salty chicken”.

“A lot of the challenging meats and ingredients we have put on as canapés so you can have them in small amounts.”

Teece, who now runs Studio Neon Catering in Sydney, learnt how to please under pressure as the private chef to Margaret Thatcher in her retirement years, during which he served the Queen at dinner parties.

“They go over everything. It’s unbelievable the time and effort that goes into a dinner party for someone of that stature.

“There were definitely a few little guidelines. It was more on the etiquette side of things … such as don’t speak unless you’re addressed. But the menu was definitely looked over.”

Teece said Thatcher was known for finding the hidden chocolate.

“That’s the one thing she could find any time of day no matter where you stashed it.”

Also working as the private chef for celebrities including Kate Moss and Keira Knightley,
he said they all had dietary requirements depending on their role.

“People always say, oh, do they even eat? But a lot of them will eat more – six or eight meals a day – but they also do gym for six hours a day.”
