Faro Restaurant’s Nicholas Rudeforth crowned Tasmania’s top young chef

As a chef working in one of Tasmania’s most celebrated restaurants, there is nothing more exciting for Nicholas Rudeforth more than a busy service.
“It’s that sense of adrenaline in the kitchen,” he said.
“When it’s busy you just push and push.”
On Thursday, the 22-year-old stepped out of his usual workplace of MONA’s Faro Bar + Restaurant and into TAFE Drysdale Launceston Campus to participate in the Nestlé Golden Chef’s Hat Award Tasmania Cook-Off.
And after upwards of 50 hours of preparation and training, he emerged victorious, winning the competition to secure himself in the grand final of one of Australia’s longest-running cooking competitions.
Mr Rudeforth said the win felt like a “big pay-off”.
“There was a lot of hard work that went into the competition,” he said.
“It costed a lot in terms of ingredients and time, so it’s exciting.”
The Woodridge-raised chef started working in professional kitchens at age 15, developing a knack for the classical French style.
With dreams of working in top European patisseries, he said the competition experience was invaluable.
“I really like the basic preparation techniques, and just making simple things taste amazing,” he said.
“The community is also great as a chef, especially doing these competitions where you meet so many people you otherwise wouldn’t have.”
The cook-off is the 60th in its history, with the national competition set to take place in Sydney in September.
