Mr Quinell is the star of Plating Blind where he shows off his culinary talent while teaching children how to cook.
He said the film motivated him to continue chasing his dream of having a cooking show of his own.
“After becoming a chef, putting out my own cookbook and doing this filming with Screenworks, I’d really like to have my own cooking show like Jamie Oliver,” Mr Quinell said.
“Regardless of your age and regardless of your ability, people with disabilities can basically make a journey to where they want to go. Never give up.”
Northern Rivers director Morgan Healy and his team filmed Mr Quinell for the series which was an 18 month process due to bushfires and the coronavirus pandemic.
He said Mr Quinell was an inspiration and showed audiences that people with disabilities were courageous and could achieve anything they wanted.
“I think if these films can encourage people to get out there and overcome any problems they have then we have done our job,” Mr Healy said.
“There are six Fearless films being shown today but there are a million fearless stories out there.”
