Inaugural Mareeb salami and sausage festa celebrates Italian heritage

The Italian and European flavours of the Tablelands will be celebrated at the first ever Salami and Sausage Festa – with a competition for the best salami. FIND OUT WHEN

THE Tablelands’ Italian heritage will be celebrated at the inaugural Mareeba Salami and Sausage Festa.

On August 7, the Mareeba International Club will undergo a total Italian makeover to showcase produce.

There is an undeniable art to making salami and sausages.

Festa spokesman Steve Cordenos said traditionally, across southern, eastern, and Central Europe, salami was made during the winter months, with recipes often a closely-guarded secret.

After the work was completed, families would get together to celebrate finishing their hard work, with music, dancing, wine and salami and sausages.

“Now that we have the Mareeba Salami and Sausage Festa, this is a fantastic opportunity to bring back this important celebration,” Mr Cordenos said.

He said there would be a competition to decide whose salami and sausage tasted the best.

There will be a panel of expert judges who will decide which is the best homemade salami and sausage in the show.

“There will be several awards with our panel rating each entry out of 20 in the areas of taste, aroma, density and colour,” Mr Cordenos said.

“Some of Australia best artisan salami and sausage makers will be contesting.”

He said guests at the event would have the opportunity to meet families competing and perhaps learn some tricks of the trade.

“But there is more to this event than just the competition – it is also a celebration of family, friends, tradition and of course, food – this festa will bring people from all different backgrounds together.”

He said there would be a homemade Italian lunch, plenty of wine, and Italian music.

The inaugural Italian Festival – Italy in the Tropics – will be held in Cairns from July 28 to August 6.
