MERMAID lattes? That’s so 2017.

If your mantra is new year, new me then you have to try this world-first creation that’s just dropped at Bam Bam Bakehouse.

The Mermaid Croissant is a magical pastry that you must try and if anyone tries to tell you otherwise, remind them that breakfast is the most important meal of the day.

Creator Ursula Watts said people were going “bananas” for the OTT take on the classic French croissant.

“Mermaids are very in vogue,” she said.

“It all started with the mermaid latte. I think the blue sort of turns people off at first, but it’s weirdly delicious.

“So we decided to experiment with a totally original idea for a croissant. It uses the same blue spirulina as the latte, edible glitter and edible crystals.”

Diners are in for an added surprise when they cut into the croissant to find a fairy floss-flavoured filling.

“It’s filled with a fluffy cream that’s a gorgeous pink,” Ms Watts said.

“As usual, it’s going crazy on Instagram and they all sold out in our online pre-sale within 24 hours.

“It sucks for people that come into the store expecting to get one from the cabinet, but as a small business, it’s a pretty good problem to have.”

The Mermaid Croissants take three days to make and are only available in-store on select weekends.

In saying that, you’ll probably need to pre-order one online at the Bam Bam Bakehouse website - for $7.90.
