Callum Hann and Themis Chryssidis are promising to bring “fun and flavour” to one of Adelaide’s best dining strips when they open the doors at their new city restaurant.

The duo have rebranded Sashi Cheliah’s Gaja by Sashi on Pirie St into a new Mediterranean-focused eatery, Olive, which will open on Friday.

A more casual diner than their other city venue, Eleven, Olive will showcase the cuisine that former MasterChef star Hann and Chryssidis love to “cook and eat”.

“It’s food you want to share with your friends and family,” said Chryssidis, managing director of Sprout Food Group.

“South Australia has a Mediterranean climate and food culture with our wine regions, alfresco dining and commitment to quality, so it made sense for the food we love to be in the street

we love, in the city we love.”

Hann said the menu will have “big flavours”, generous share plates and encourage all-day dining.

“We want a casual, relaxed vibe, where good food, good tunes, good drinks and good people all come together,” he said.

Hann and Chryssidis, who co-founded Sprout Cooking School in 2011, said the restaurant’s location in Pirie St was ideal, and the space has been given a “light and bright” makeover.

“It’s one of the best dining strips in Adelaide... it’s continuing to grow and it’s only a couple of hundred metres down the road from our other restaurant. It just feels right,” Chryssidis said.

The duo also teamed up for Mediterranean eatery, Lou’s Place, at the Lou Miranda Estate cellar door in Rowland Flat, in 2020.
