THE Gold Coast has seen some bizarre baking trends come through, but here’s one that literally takes the cake — a concrete cake.
Carrara-based baker Andrea Zappacosta of Andy Bakes, says the concrete cake — which thankfully, does not taste like its namesake — is a growing trend that has just started to pick up on the Coast.
“I first found out about it when a bride called me up and wanted that look, she specifically asked for concrete,” she said.
“Trends are always changing, people are always trying to be different from others.
“The drip cake is still a big trend as people are still ordering them, but now they are making it look more like artwork.”
Ms Zappacosta said fondant cakes, which traditionally had a thick layer of icing, were now replaced by “down-to-earth” pieces.

She said the concrete trend was part of this bigger movement towards classy, elegant and simplistic-looking cakes, which also included ‘naked’ cakes.
“Fondant’s out, people want more simple, elegant and classy cakes,” she said.
“Olive leaves and figs go really well together with these cakes.”
Concrete cakes were likely inspired by interior design before being applied to baking, she said.
Ms Zappacosta said the concrete cakes were quite time consuming as they required at least four different shades of grey, each of which had to be applied one shade at a time before cooling it in the fridge between each layer.
Concrete cakes start at $175 and can be decorated.
