IT’S National Pasta Day today — not that we need any excuse to indulge in one of the world’s favourite foods — so we’ve compiled a list of seven of Sydney’s best Italian joints.

THINK pasta is all about spaghetti and meatballs and lasagne?

Think again on National Pasta Day it is time to dive into some creative Italian fare like beetroot ravioli, pizza layers filled with baby calamari ragout and squid ink linguine pasta.

1. BAIA THE ITALIAN

Baia THE ITALIAN, with pasta dishes like cab risotto with fennel, chilli, dill and salmon roe as well as open style ravioli stuffed with braised duck leg ragu, tomato concasse, rocket and grilled asparagus, is celebrating Pasta Day all this October. They have teamed up with Barilla to offer a special pasta-filled lunch, dinner and aperitivo hour on October the 25, 26 and 27.

2. JAMIE’S ITALIAN, SYDNEY

Jamie’s Italian make fresh pasta on site every day. Their Spring pasta menu includes dishes like Buffalo ricotta and black pepper pasta parcels in lemony butter sauce with peas and mint, as well as an Octopus ravioli in a rich shellfish and tomato sauce, topped with picked white crab.

3. ROMANA MARTA, RUSHCUTTER’S BAY

This new restaurant by Popolo’s owner-operator Flavio Carnevale, which opened last week, has a Roman focus and the pastas include traditional regional specialities such as cacio e pepe and carbonara. The must-try dishes include Suppli, crumbed and fried rice, mince and mozzarella croquettes, and Tiella Gaetana, thin pizza layers filled with baby calamari ragout.

4. FRATELLI FRESH

Fratelli Fresh, Rockpool’s group’s Italian chain, has a hand-made pasta menu that spans antipasto, insalata, primi, secondi and contorni. The specials change daily and one recent example was a squid ink ravioli filled with rock cod and confit tomatoes and served with dill and saffron foam.

5. SOTTO SOPRA, NEWPORT

Sotto Sopra is a woodfired trattoria, from the Ormeggio at The Spit team, that offers gems like Ravioli dell’orto, a beetroot ravioli with goat cheese, fresh beetroot and peas, chervil and pine nuts, as well as Tagliolino allo scoglio, with mussels, prawns, parsley sauce, tomato battuta and lemon zest.

6. FRATELLI PARADISO

Delivering a little slice of the Melbourne dining experience to Sydney, Fratelli Paradiso is serving up pasta dishes like a prawn risotto with stracciatella and Calabrian chilli and a Tagliatelle beef brisket ragu.

This fresh pasta is made by a local family to traditional recipes and includes a squid ink linguine with Bottarga (Sardinian caviar), cherry tomatoes, garlic and parsley salsa with a touch of chilli.
