Fishbowl, Parramatta Square: New eatery announced

A popular eastern suburbs healthy fast food company has opened its first outlet in Sydney’s west and wants to prove you can win friends with salmon, avocado and kale-packed salads.

Popular eastern suburbs eatery Fishbowl has opened at Parramatta Square and plans to prove you can win friends with wholesome salads away from Bondi.

The Japanese-inspired salad bar eatery is the second to open at the square’s underground link following Betty’s Burgers launch in June and connects to the $3.2 billion Parramatta Square corporate hub.

Casper Ettelson, who formed the company with his school mates Nic Pestalozzi and Nathan Dalah at Bondi in 2016, said the Parramatta eatery would be a chance to add to its 24 Fishbowls, while starting afresh.

“Parramatta for us is an amazing growth area and it just seems it’s a new city,’’ he said.

“It’s a place we’d like to be and we’ve been waiting for the right opportunity and right space and this development and buildings are amazing.’’

“We just wanted to create something that we wanted to eat ourselves, everyday flavours we love and we just wanted to create a change in the way people view fast food,’’ Ettelson said.

“Fishbowl has been a vessel for driving health even in our own lives.’’

The most popular dish is the O.G bowl (regular $12.90, large $16.90) with salmon sashimi, shallots, kale, beets, red onion, edamame beans with roasted sesame dressing, seaweed salad, tobiko (fish roe) and crispy shallots.

A spring menu featuring pumpkin with trademark avocado chunks and tofu has been introduced while permanent menu fixtures include the Big Papi II (regular $14.90, large $18.90) with wild-caught tuna sashimi, cabbage, shallots, beets, radish, nori, tamari almonds and wasabi peas.

Ettelson says Fishbowl also has plans to expand in the western suburbs.

Elsewhere in Parramatta Square, Italian restaurant CicciaBella has pushed back its launch from September to late October when it plans to start serving from Tuesday to Saturday nights.

Other establishments to call the Square home in spring are Ruse Bar & Brasserie, Harvey’s Hot Sandwiches and Threefold Pastry.

Fishbowl is open every day from 11am to 9pm. To celebrate its official opening on September 12, it will give away the first 100 bowls for free.
