Raw vegan dessert shop opens on lower north shore in Military Rd, Cremorne

THE words vegan and dessert might sound mutually exclusive but for one lower north shore businesswoman it’s her recipe for success.
Whitney Koitka will open raw vegan dessert shop Little Raw Co. in Cremorne next week.
Her passion for making raw vegan treats started 10 years ago when she wanted healthy dessert options.
“My diet does include more plant-based ingredients than animal products,” she said.
“I believe it’s important to fuel our body with unprocessed, wholefoods that are high in nutrients.
“I began making desserts as a fulltime job two years ago and demand grew and grew.
“I sold at Paddington and Frenchs Forest markets a year ago and then progressed to Mosman market where my desserts became extremely popular.
“It has always been my goal to open my own store and this is a natural progression from the markets.”
Miss Koitka said anybody who wanted to eat delicious desserts made with ingredients that “nourish the body” would like her range.
Her shop will sell raw vegan cupcakes, cakes and truffles and cold drinks including kombucha and cold brew coffee.
She said people with dietary requirements such as gluten, lactose and refined sugar intolerances could eat her desserts.
“Our desserts are 100 per cent natural which means free of preservatives or additives and genetically-modified ingredients,” Miss Koitka said.
“To maintain the nutrients we don’t heat our ingredients above 46 degrees Celsius.
“We use plant-based ingredients like cashews, coconut milk and coconut oil compared to traditional cakes using eggs, flour and sugar that need to be cooked.
“Our recipes follow a unique ingredient ratio so you are left feeling light and satisfied.
“We avoid excess use of coconut oil and modified ‘healthy sugars’ so that you won’t feel ill, heavy or bloated like some raw vegan desserts leave you feeling.”
Little Raw Co. is at 1/271 Military Road, Cremorne. The official launch day is Saturday May 7. The shop will open seven days a week.
