Summer drinks at SuGarfish, Jah Bar and Stowaway

IT IS heating up and it’s time for drinks that spell summer. We have three bars that provide just that, so you can grab a whisky sour made with passionfruit, a pepino ginebra or even an ‘Oh Danny Boy’.

IT’S summer and if you’re looking for somewhere to enjoy a leisurely drink, here are three bars to try.

SUGARFISH

Garfish Manly is primed for summer with SuGarfish, its new bar.

The rebuild took two weeks and SuGarfish now sits neatly in one corner and makes the most of its vantage point.

SuGarfish is light and airy — thanks to an atrium-style roof — and opens up to take in the Harbourside views. It also has been fitted out with Italian tiles and funky bar stools where customers can linger over drinks and shared plates from the exclusive bar menu.

The venue has been redesigned for an older market, restaurateur Mark Dickey said.

“After 10 years we needed a more sophisticated space for an older crowd who want quality cocktails,” he said.

Pre-dinner drinks have become popular with customers, he said. Mr Dickey expects SuGarfish to serve plenty of aperitifs and drier cocktails such as negroni and its version of a whiskey sour made with passionfruit over summer.

Shared plate food from the bar menu will work with either a glass of wine or cocktails. Think of seafood like kingfish sashimi, and a reinvented prawn cocktail, which will be served in a jelly so it is lighter and fresher for summer.

JAH BAR

Jah Bar brings a double dose of Barcelona to the beaches. There’s the original Manly tapas bar in Central Ave and the more beachy venue opposite Dee Why beach. Both are ready for summer with a selection of cocktails and that essential flavour of Spain, sangria.

Gin drinkers can sample the pepino ginebra, which brings together another classic pairing, gin and cucumber.

The house gin is a Sydney gin mixed with cucumber, sugar syrup and lime juice. If gin’s not your thing, then there are jugs of sangria. And there’s a choice of either white or red sangria.

Red sangria is laced with drunken fruits, spiced syrup, rum and ginger beer; while its white counterpart has drunken fruits, vodka, pomegranate, mint, berries and triple sec.

STOWAWAY BAR

Freshwater’s Stowaway Bar has earned a reputation for creating crazy fun drinks. When the temperature soars, Oh Danny Boy is an ideal summer tipple. This cocktail is made with raspberry sorbet spiked with Tullamore Dew Irish whisky and served with crème de violette, champagne and squeezed lemon.

With the growing popularity of gin, Stowaway’s answer is the Electric Mistress. This gin-based cocktail, is another salute to summer, blending Broker’s London dry gin, lychee liqueur, elderflower and rose.
