Papi Chulo, 4 Pines and Das Bierhaus celebrate winter with hot drinks
WHEN it’s cold outside, warm up a winter night with a warm toddy. Think Bailey’s infused coffee or mulled apple cider. The latest craze is imbibing hot drinks.
WHO can resist a hot toddy on a cold winter’s night? Manly harbourside restaurant Papi Chulo has introduced a new, boozy drink that infuses Baileys Irish Cream with a milky latte.
Bar manager Pauric Kennedy came across the drink in Ireland.
“It’s a hugely popular after-dinner drink over there,” he said.
“It will warm the cockles of your heart.”
The drink was on the dessert menu, Mr Kennedy said.
“We make it with a single shot of coffee,” he said. “It’s not as caffeine-heavy as an espresso martini.”
Across the road, Manly boutique brew pub 4 Pines is warming the hearts and hands of its customers with another home brew, a mulled apple cider.
Hospitality operations manager Sarah Thomas said 4 Pines made its own apple cider under the Brookvale Union label.
Manager Luke Atkins came up with a recipe using a keg of apple cider and a spicy syrup.
Syrup ingredients include chai masala from Infinity bakery in Manly, cinnamon and brown sugar.
The drink is also available at 4 Pines Truck Bar in Brookvale.
Traditionally, Gluhwein is served at winter markets in Europe but the warm, mulled red wine is also a favourite at Das Bierhaus in Mona Vale.
Restaurateur Stefan Thomaschuetz has his own version and heats up spices, red wine, lemon and orange with aniseed, cinnamon and a shot Austrian rum.
It was served with a cinnamon stick and an orange slice, he said.
