From the creative kitchens of northern France to the northern beaches — via Bondi — a new French eatery is set to open its doors in Manly.
Crepes Aubras will be serving up sweet crepes and savoury gallettes based on traditional recipes from Brittany.
The business, which opened at Bondi Beach about a year ago, is expanding to take over a lease in prime retail space in the historic Darley Smith building on The Corso, just down from St Matthews Anglican Church.
It’s the brainchild of top-class French pastry chef Maeva Aubras.
Ms Aubras, who has worked in five-star hotels, has lured her friend, Guillaume Nicaud, to Sydney to manage the new outlet, set to open later this month.
And he’s still on the lookout for more local staff.
Mr Nicaud said on Friday he was looking forward to getting to know, and living in, the area.
“We went Crepes Aubras to be a place for locals to come to as well as people who are visiting Manly.
“Maeva gets her ideas from recipes from Brittany.
“She is a master chef and she has created the atmosphere and the recipes. They will be the same as the shop at Bondi.
“She will train everyone in making the meals that are very, very popular in France.
“There are lots of ingredients, cooked fresh.”
In his sales pitch to would-be employees Mr Nicaud said he was keen to interview “motivated, proactive, and smiley individuals with a passion for coffee and crepes”.
Experience with making crepes and coffee would be a plus.
