Hold onto your pretzels as a new German bierhaus-inspired experience with a twist, Cuckoo is about to hit Newtown.
Upstairs at The Marly, in the space previously occupied by Miss Peaches, is being turned into an Alpine wonderland that starts from the moment you hit the bottom of the stairs.
As you climb the stairs the walls around you are covered with quirky projections and a music soundtrack - think “Popcorn”.
Experience director Tara Sullivan said the fun continues as you walk through the door with a games room with a rock climbing wall, foosball table and Inst-worthy Alpine moment.
Inside you will be transported to an Alpine region that has been given a Newtown twist thanks to the famed International World Wide design team.
Cuckoo clocks abound alongside medieval armour, a thatched roof made from skiis and kitsch artwork in a space that is weird and wired with inspiration from the underground youth scenes of Germany.
There will be schnapps infused with treats from childhood, a German take on the cocktail menu and the “Condiment Kingdom”, where guests will be encouraged to pimp pretzels.
Behind the bar Drue Stevens is serving up housemade “snaps” with sweeteners that include honey from the bee hives on The Marly rooftop.
“My favourite is the peppermint bee-sting made with peppermint, vanilla, almond and The Marly’s honey,” Stevens said.
Other bar highlights include the Duche, his take on the may bowl, a punch made with German brandy. Designed to be shared between two it is served in a mini-barrel with shot glasses dressed with strawberries.
The cocktail list includes Deer’s Blood, named after the rumoured secret ingredient in Jägermeister, and made with honey-infused Vermouth.
The food has also gone Cuckoo with the classic strudel transformed into a spring roll. The focus on finger food continues with Pluto pups, currywurst and croquettes.
And no German bierhaus experience would be complete without a big selection of schnitzels, including vegan options with Cuckoo continuing The Marly’s commitment to serving great plant-based food.
Cuckoo opens to the public on Friday, October 18 at 145 King St, Newtown. Visit marlboroughhotel.com.au
