Brewristas make amazing coffee as well as some freakish shakes and injecto muffins

WHEN you’re listing premium coffee destinations, Sydney normally wouldn’t be the first place you would name.
But the team at Brewristas in Glebe is changing that, and the self-confessed coffee nuts are on a constant search for the perfect brew.
Head barista Tyler Walsh knows most of the regulars and greets them with their coffee order at the front counter, but it is only when you wander further into the long store that you realise how deep-seeded this coffee fetish is.
“Our brew bar is our pride and joy,” Mr Walsh said.
Whether it’s an espresso craving, a chilled option, a classic cold drip or something siphoned or poured over in the decanters at the brew bar — these guys have you covered.
Service manager Jordan Ceglinski lives and breathes coffee and loves his job.
“Our cold drip is made by dripping filtered water through lightly roasted coffee for 10 hours,” he said.
“The sky is the limit here (at the brew bar) because you control every aspect.
“We’re all so passionate about coffee, that work and rest of your life tend to blur into one, but in a really good way.”
But the menu at Brewristas extends well beyond coffee, and it’s fast becoming a dining destination in it’s own right.
The Favourites menu includes a dish known as the Frankenstein, and for $20 you’ll be more than satisfied after devouring the toast with smashed avocado, homemade tomato chutney, tortilla chips and a sunny-side up egg.
The burger menu has a good range too, and a standout is certainly the Hot Chicks burger, for $18.
A toasted Brioche bun is jam-packed with a fried free-range chicken fillet, pickled daikon radish, lettuce, and gochujang sauce. It’s one of the tastiest and most unique burgers you’ll find in Sydney.

And, if good food and outstanding coffee aren’t enough, the team at Brewristas also ensures it’s well ahead of the latest trend in sugary creations.
Jason Wassef is the resident milkshake-guru and he said he loves experimenting with flavours.
“People want bigger, bolder shakes and we try to make it fun too,” he said.
“But the most important thing is that they’re tasty.
“For now, it’s a weekly special thing and we post it on Instagram on Thursday or Friday.”
One popular recent creations have included a Triple Chocolate Shake, full of Tim Tams, homemade brownies, chocolate ice cream, home-chocolate sauce, and topped with more brownie and garnished with Tiny Teddies and Freddo heads.
The Cruffins ($5), Injecto muffins ($7) and milkshakes (from $8) are definitely the stars of the sweets menu, and are ensuring Brewristas is getting a fair bit of internet fame, and is packed seven days a week.
