A much-loved watering hole in Sydney’s west has launched a new bistro and cocktail lounge after undergoing its most significant refurbishment in more than half a century.
The Winston, at Winston Hills, underwent a multimillion dollar renovation in June to launch Cala, a Palm Springs inspired bistro and cocktail lounge.
The renovated space includes an outdoor dining area alongside retro sports bar Taffy’s.
The revamped space, which is influenced by the design of the Santa Monica Hotel in California, includes timber framing, retro accents and floor to ceiling windows leading out to an outdoor dining area with private nooks and cabanas.
The venue’s capacity has not changed, with the bistro still seating 500 people and Taffy’s seating 250.
A new menu, shaped by locals who were invited to share their preferences on social media, includes pub classics as well as wood-fired pizzas, steaks and weekly specials.
The new drinks menu includes craft beer, wine and signature cocktails such as mojitos served on a trolley before being muddled tableside.
Publican Andrew Thomas said he was proud of the venue’s reimagined spaces.
“We’ve carefully designed our indoor and outdoor bistro, Cala and sports bar, Taffy’s, to cater to every guest,” he said.
“Whether you’re here for a relaxed meal, catching up with friends over cocktails, or enjoying a game in our retro sports bar, The Winston is now a place that truly feels like home for our community.”
The renovations were the first major project at The Winston since 2013 and came 15 years after the Thomas family added the venue to its portfolio – which included The Oaks at Neutral Bay before it was sold in 2023.
