After working at the Michelin-starred San Francisco restaurant Atelier Crenn under celebrated chef Dominique Crenn, Josh Mason has returned to Sydney and set up his own place in Baulkham Hills.
Quoi Dining opened about a month ago in Century Circuit and is a must visit, offering sophisticated food and an extensive wine list.
At just 23 years old, Josh has an impressive resume and a serious list of accolades to his name, including sponsorship from Renault Australia and Victorinox.
The young chef was born into hospitality, with his parents owning restaurants around the state.
“I was the baby who slept under the counter,” he said.
The boutique restaurant seats about 50 people in a sleek, modern dining room where the open kitchen is the star.
Diners can watch Josh and his team prepare beautiful, delicate dishes with intense focus – a mesmerising process – before the plates travel a few metres to their table.
