A new force in Sydney’s distillery game is set to re-shape the industry with its “cutting-edge processes” that aims to raise the benchmark of small-batch spirits.
Hills Distilling Co is the Hills District’s first locally owned distillery, producing handcrafted gin and vodka that is backed by a Momento Hospitality, one of Sydney's leading hospitality groups with more than 40 years of experience.
The company was born from the challenges of the Covid pandemic, and the team saw an opportunity to not just adapt, but to give back to the local community.
It has focused on handcrafted excellence, using fresh, locally sourced ingredients and opened its doors last month.
The Rouse Hill venue offers guided tours of the production space and hands-on masterclasses every Thursday.
Its owners hope to cultivate a culture of pride and passion, nurturing local talent and championing the artisans “who call these hills home”.
