A NEW generation of creative chefs is diversifying Fairfield’s famed food scene by adding their modern touch to a region best known for its traditional cuisine.
We are rounding up the best burgers, chicken and cocktails on offer in southwest Sydney’s food capital.
Superior Burger
The mastermind behind Ultimo’s former Pub Life Kitchen has returned to his roots to set up the most popular burger joint in Wakeley.
At Superior Burger Fairfield-born Jovan Curic serves up great Australian takeaway in the form of good burgers, good chicken, good drinks and a fun place to hang out that harks back to the nostalgic neon atmosphere of a cornerstore burger joint.
The burgers feature naturally raised Angus beef and vegetables from Horsley Park’s Sun’s Fresh Farm.
Try the fried chicken burger, or the original superior burger with juicy beef, cheese, tomato, lettuce, superior sauce and pickles.
Papa Do’s
It’s Vietnamese food – but not quite like your mother makes it.
For a year now Papa Do’s has been serving up a modern take on Vietnamese food, interspersed with house-made whisky, Kanye West listening parties and an array of board games in the vivid surrounds of their Cabramatta restaurant.
There is no limit to what the Do brothers can create when they blend their Vietnamese heritage with the modern elements they love.
Try the chicken with pho jus and house pickles with a side of American-style cornbread along with their signature house-made whisky.
Dirty Bird
A southwest Sydney food truck has the chicken Katy Perry loved so much she ordered seven additional burgers on a recent visit to Australia.
Dennis Chan’s Dirty Bird truck was at The Voice Australia’s grand finale in July 2017 when the songstress emerged to get another fix of their fried chicken.
Some punters have compared Dirty Bird’s fare to KFC, but Chan said the key difference is a crunchy batter instead of the thick, floury variety.
Asian flavour influences also set Dirty Bird chicken apart from the rest in the west.
Bar 53
For a pint without the pokies there is no better venue in the southwest than Bar 53.
The Canley Vale bar is styled like a house party, complete with a bar that looks like a kitchen.
The bar has a highly coveted general bar licence, which means you don’t have to eat in order to enjoy one of the bar’s spectacular cocktails, including Agwa sours, passionfruit mojitos, espresso martinis, whiskey sours and margaritas.
However, if you feel like a feed, Bar 53 also serves up chilli chicken wings, cheeseburgers, pulled pork burgers and loaded fries.
John Belvedere
John Belvedere takes the best of Vietnamese tradition and a distinctly modern approach to create fantastic fusion food from burgers to Vietnamese fried rice cakes.
The Cabramatta joint serves up burgers complete with beef patties made fresh daily and classic trapping such as bacon, cheese, tomato, lettuce, pickles and onions.
However, it also appeals to a more traditional taste with Vietnamese fried rice cakes, or bot chien.
The fun starts in the early morning with coffee and breakfast also on offer at the local haunt.
