One or Two Brews: Dubbo brewery celebrates first birthday

A brewery in the state’s central west is about to celebrate a major milestone … and it all started with four best mates and their “mad project” in a backyard shed.

A brewery in the state’s central west will be celebrating its first birthday at the end of this month with a unique selection of curated beers.

What started as a “mad project” in a backyard shed during Covid led to four best mates from Dubbo – Gary Sienkiewicz, Damian Meehan, Chris Evans and Paul Stubs – transforming their hobby into a brewery specialising in beer and gin.

One or Two Brews opened on June 29, 2023, and has already made a local name within the community with local craft beer and spirits.

“We’re building friendship and a community of locals who come by constantly who love the place and love what we’re doing,” Mr Sienkiewicz said.

“Every weekend we have some muso, whether they’re local, from Mudgee or from Sydney.”

Mr Sienkiewicz said the project started with the boys making beer and cooking in their backyard before expanding into the local market.

“We all enjoy flavours, tastes, meats and all sorts of things so we’re just creating a bigger cubby house,” he said.

“Dubbo doesn’t have a venue like this – it’s unique, it has a bit of a coastal and a city vibe – we’re not pretentious and try to keep in our lane.

“We enjoy what we do and we’re finding that people are looking for us and enjoying what we’re doing as well.”

He said while the venue was established, it was constantly growing by adding new menu items and building on its atmosphere.

The brewery is open Friday, Saturday and Sunday afternoons and will be hosting a one-year anniversary celebration on June 29.
