Sydney’s most Instagrammed cafe is set to open a new ‘heavily coffee-focused’ expansion as part of a $1.5 billion redevelopment at South Eveleigh.

Sydney’s most Instagrammed cafe The Grounds of Alexandria is set to open a new “heavily coffee-focused” expansion.

Its head company The Grounds has signed on to be one of the first tenants in Mirvac’s $1.5 billion redevelopment of the Sydney Technology Park, now known as South Eveleigh.

The Grounds Roastery, as it will be called, is to be built inside one of the old locomotive workshops being fitted out as new office and retail spaces at the historic site.

Head roaster Nick Ferguson said the new venture’s “grand” simplicity would differ it from the Alexandria site.

“The Eveleigh site is going to be heavily coffee-focused,” he said.

“The venue is very grand and beautiful.

“Alexandria is a unique venue with so many different aspects, it’s kind of crazy. South Eveleigh will be much simpler. It will basically be in a big warehouse.”

The new venue will include giant state-of-the-art roastery, espresso bars serving a variety of coffee types, coffee research labs and training rooms.

The Grounds’ roasting and wholesale operations would run out of the site.

It will still boast the same food offerings as its sister sites, but unlike Alexandria’s animals and greenery, it will make every stage of coffee production — from roasting the beans to the espresso being poured in your cup — the showpiece.

Mr Ferguson, who has been with the company “since the beginning”, said the South Eveleigh site would be unlike anything else in Sydney.

“I’ve watched it (The Grounds) evolve and different aspects of the business have changed,” he said.

“As we’ve grown as a coffee roaster, I feel like the Eveleigh site is the missing piece in the puzzle that will allow us to showcase what we do best.”

The Grounds Roastery is set to open in late 2020. The company’s other venues including The Grounds of the City on George St.

When complete in 2021, South Eveleigh will be home to 18,000 workers and include new bases for Channel 7, the CSIRO and the Commonwealth Bank.

Other retailers that are locked in include Xtend Barre, Mo&Co, Eveleigh Lash & Brow, Egg of the Universe and Bodyfit.

A supermarket and food markets run by Carriageworks are also earmarked for the locomotive sheds.
