Mr Collins had a goal to further evolve and diversify the beverage offering along Kensington Street.
He said Spritz Bar, which has a very modern and Mediterranean feel, sits three stories high and will be the perfect spot to enjoy a drink and have a bite before or after dinner.
“We’re so excited about the launch of Spritz Bar taking over what was the Olio Terrace,” he said.
“It’s a complete contrast to the look and vibe of Gin lane with a lighter, airy retro Mediterranean rooftop.
Gin is still the feature of the menu, but there is a huge focus on modernising the classic ‘Spritz’.
“As with the G & T, we believe it be an absolute classic that is always on trend,” Mr Collins said.
Mr Collins has carefully devised 22 handcrafted cocktails.
Highlights include the Flower Power Sour — a rum based drink with electric butters, elderflower and hibiscus syrup.
Mr Collins said the best part is that it is served in an actual flower pot with edible soil.
The champagne and strawberry martini, another favourite, combines vodka, Crème de Fraise, pressed strawberries, champagne foam and candied strawberry.
The Cucumber and Watermelon Gin and Tonic is served on tap, made with Tanqueray Gin and Fresh watermelon and cucumber.
The Rooftop Colada is served as a slushy with rum, cold-pressed pineapple, coconut water and toasted coconut all served in a tiki mug with a lei and a sparkler.
The Rooftop Bramble is another favourite. It is a gin based cocktail with a spiced red wine fog.
Complementing the cocktail list is a bites bar menu curated by head chef, Lino Sauro of Olio Kengtinson St.
Mr Collins said guests must try out the Arancini stuffed pecorino cheese and saffron as well as the crostone E Caponata (a warm stuffed bread with Sicilian caponata and fresh ricotta cheese) and the Italian cheese board.
Spritz Bar entertains guests with 1950s and 60s inspired jazz beats in the evenings and will be introducing live jazz nights in the coming weeks.
