An executive chef who’s worked across five continents is finally set to open a venue in a major shopping centre after COVID-19 delayed the opening of the fusion restaurant.
Townsville Dosa by chef Sunil Prasad opens today in the Stockland Townsville food court and offers a multi-cuisine fusion which draws on his vast experience.

Mr Prasad co-owns the business alongside Anil Varghese, who has a background in catering, with the dynamic duo hoping to offer something new to Townsville.
He said dosa, a tortilla-like rice pancake, was freshly made on site and was the main ingredient in every single product.
“That batter consists of just rice and split lentil,” Mr Prasad said.
“We fill it with different stuffing in each and when we say stuffing, it consists of chilli con carne, chicken and cheese melt, bolognese sauce and so on, with 16 different varieties.
“We’ve got a few vegetarian options and for vegans we have a separate flat top and we do pure vegan, vegetarian dishes.
“All our dosas can also be made gluten-free.”
The delayed opening put the owners under some financial strain but also provided an opportunity to take extra time setting up.
Mr Prasad said he decided to open in Townsville because it suited the lifestyle of his family, who loved the community.
Stockland Townsville centre manager Andrew Stallan said the store added to the centre’s already diverse offering.
“It’s been really inspiring to see Sunil’s tenacity and resilience during this time, and the way in which he’s taken every challenge head on and with a positive attitude,” he said.
