If you get a visa, you can cook anywhere, says globe-trotting Hobart chef Jack Donohoe

HOBART chef Jack Donohoe is living proof that a job in hospitality can take you around the world.

His latest venture, One Star House Party — the name is a spoof on three-star Michelin locales — sees Jack and two partners pack frying pans, kitchen aids, cooking gear and fold-up tables into suitcases and fly to exotic locations around the planet to set up pop-up restaurants.

They open a pop-up for five to seven days before they pack their bags and head on to the next location.

They hop from country to country looking for new culinary experiences — to taste the food, see how it is produced and feed it back to locals, One Star House Party style. “It’s good food but it’s not confined to fine dining — it’s just like a house party,’’ Jack said.

The 25-year-old former Calvin Christian high school student left Elizabeth College in year 11 after placements in restaurants through a VET course.

Jack said he was excited by “the thrill of the service and it just kind of took off from there.”

“It took me a few years to form a real understanding of it — to really appreciate it.”

His first job was at the former Marque IV on Elizabeth St Pier before setting off for London.

“Hospitality is a really flexible career because, as long as you can get a visa, you can cook anywhere.”

He worked at a modern gastropub in Fulham, co-owned by Australian Brett Graham who also owns The Ledbury in Notting Hill — ranked the 20th best restaurant in the world and the best in Britain three years in a row.

“A lot of young people do that — there’s a lot of Aussie chefs there. It’s a good environment with a big variety of restaurants.”

Jack’s team has set up in Seoul, Taipei, San Francisco, New York City and Hong Kong — next stop is Beijing.

“It sounds kind of haphazard but things kinda fall into place.”
