Sydney Tower’s revolving restaurant will get a $12 million makeover. The radical plan will transform the famed 360 Bar and Dining restaurant into a world-class dining and drink destination.

It could be considered one of the biggest challenges in Sydney hospitality history.

How do you take a somewhat dusty icon and transform it into one of the coolest food and drink destinations to rival anything else in the world?

Well, for a start, you inject a hulking amount of cash — in this case about $12 million, pledged by Sydney Tower’s hospitality leaseholders Trippas White Group as part of their radical plan to transform the famed 360 Bar and Dining revolving restaurant into a world player. Next, a top international head chef, with talks currently under way.

In the meantime, a slick renovation overseen by local design group loopcreative — the same team behind Sydney food favourites such as China Lane and Zushi — to be unveiled in July.

It’s the culmination of a long-term, five-year planning effort, according to Trippas White Group CEO Joseph Murray, who envisages a new era which sees the revolving restaurant — that retro-esque dining concept first hatched in the US in the 1960s — becoming the epitome of cool again.

“Imagine having this amazing restaurant, with world-class food. Then you add to that the fact that it’s at the highest point in the southern hemisphere … that’s not daggy,” Mr Murray, who served as the group’s chief financial officer before taking over as GM in 2014, said.

“First and foremost we want to be the best restaurant. And once we have that in place we take it up to the sky.

“No one else has a venue like it which is what makes this so special.”

Scheduled to re-open on July 28, Murray confirmed the refurbed restaurant and bar will serve food and drinks until 3am in an ambitious tilt at wooing the late-night market, with locals as well as tourists targeted.

“We want it to be very broad. We want locals to walk out of there saying; ‘what an incredible experience’. It won’t be just best for tourists. It will simply just be the best.”

The venue will offer its final service today before the five-month closure.

It comes as the American Express delicious. Month Out kicks off officially this week with a string of events for food lovers scheduled across the city.
