DAVE Schenk is the first to admit he doesn't fit the profile of a multimillion-dollar rooftop bar manager.
Sporting a Star Wars T-shirt and flannel jumper, the man behind some of Toowoomba's most beloved events said he was shocked to receive the call from his old mate Phil Coorey.
"When Phil came to me and ask if I'd be interested in taking on this challenge of revamping George Banks, at first I thought I wasn't the guy to create a fine dining experience," Mr Schenk said.
"Anyone who knows me and my Star Wars shirts and my music and the things I love would agree with that.
"To be fair, Phil isn't that guy either, but together we are the team to create a place where it's fun and people have a good time."
Hospitality might not be in Mr Schenk's CV but events co-ordination certainly is.
Along with co-ordinating the hugely popular Easterfest every year until it was discontinued, he also played key roles in attractions like Brewoomba, Streets and Lanes Festival as well as Brews and Barbie Bash.
Mr Schenk said the first task would be to change the notion that George Banks was too fancy - a common complaint from potential patrons.
"I don't feel very bound up by the rules of hospitality," he said.
"I'm an event guy and I guess I look at it like we're running an event for people every day.
"Every day we're open, it will be about trying to create a very special experience for people.
"If people could come once and we create a great experience, which is what my background is in events, they'll want to come back."
The new George Banks will open on Friday, September 4.
