AT THE age of 17, Carlene Dwyer-Dockrey began decorating cakes after learning to bake from her mother and grandmother.

When she moved back to Grafton four years ago, she saw a hole in the market that sometimes made her home cake decorating business more difficult.

"There is nothing here, you have to go away or online to get stuff, all supplies. So I thought why not? Grafton doesn't have much in the supply range," she said.

But Ms Dwyer-Dockery has no plans to stop decorating cakes.

"My daughter Angela, she will look after the shop while I go home to make my cakes," she said.

Ms Dwyer-Dockrey said her mother and grandmother helped foster her love of baking at a young age.

"They were really good cooks, especially cakes and sponges, and I just love it," she saidr.

The career decorator is a wealth of advice and information for any aspiring bakers who make their way into her shop.

"I made a sea turtle not long ago, he was one of my favourites, he's on my cake (Facebook) page," she said.

Ms Dwyer-Dockrey knows her shop will be a hit among the locals too.

"I know a lot of cake decorators, obviously from being in the business, here, in Coffs Harbour, in Maclean, Yamba, and they all know about it and they are all excited," she said.

But it isn't just the professionals who will be lining up at the doors.

"Everyone's sort of excited I guess. People who are not actual decorators who do cakes for themselves and for their family are pretty excited too, because they can come in a get the lustre dust and all the glitters and things like that," Ms Dwyer-Dockrey said.

Ms Dwyer-Dockrey will be stocking everything from airbrush colouring, to gum paste and the tools any cake decorator could wish for.

Your Dream Cake Decorating & Supplies officially opens today at Shop 2A 54-56 Prince St, Grafton.

The shop will be open from 8am to 5pm Monday, Tuesday, Wednesday and Friday, 8am to 8.30pm Thursdays and 9:30 to 2pm Saturday. Ms Dwyer-Dockrey said she would open the shop for anyone who needed something last minute on Sundays.
