Circa Espresso founder Aykut Sayan reveals more wine bar details

The founder of one of Parramatta’s most celebrated cafes has revealed more plans for his neighbourhood wine bar where his main vision is to let the good times flow.

Circa Espresso founder Aykut Sayan says he is firmly planted in his beloved Parramatta and has proven so by offering a glimpse into his new venture – an inviting, cosy wine bar alongside his celebrated cafe.

A development application for the venue has recently been lodged with Parramatta Council and, subject to approval, will operate for 30 patrons in the elegant heritage-listed Victorian building that was used as Chuffed barber shop until last year.

“I’ve always loved the idea where local people can drop by at 11 o’clock and have some drinks,’’ he said.

“I think of it as a neighbourhood wine bar and the prices will reflect that.’’

Dim lighting and candles will illuminate the 1920s building, which has already started to be decorated with eclectic furniture and funky art near a charming (non-working) fireplace.

Diners will be served “super price-accessible” international wines with a succinct cocktail list including espresso martinis made with Circa coffee beans, and seasonal dishes to complement beverages.

The bar is expected to open up to five nights from 5pm to midnight when it first opens.

Sayan’s vision for a wine bar has been a slow burn project that faced several setbacks.

“I will be more excited when people have a glass of wine in their hands and are enjoying the product,’’ he said.

“Like when Circa opened, I didn’t know how it was going to go. I’m just doing what I love and what I enjoy and hope people gravitate to it.’’

Of course, Circa has garnered a swag awards since it opened in 2010 and Sayan hopes his yet-to-be-named wine bar can mirror that success, right in the heart of Parramatta.

“I like the idea of planting myself in Parramatta - I’m not moving away from here,’’ he said.

“What’s important for me is that everyone enjoys themselves.’’
