BIG serves and big flavoured Polynesian eats are coming to the Lantern Lane dining precinct of Stockland Cairns.
Freshies is the passion of Samoan-born and Kiwi raised businessman Lester Vaele who said his food from the Pacific Islands would be a good fit with existing eateries focusing on South East Asian cuisine.
“The Samoans, are well known for big dishes, giant pork buns, raw fish taro and huge lamb ribs,” he said.

“And a lot of our sweets like coconut buns and our main source of sustenance is taro.”
He said few Cairns restaurants serve Polynesian cuisine and hoped Cairns foodies would develop an appetite for a taste of the Pacific.
“A lot of people connect with island food and because not many are doing it there is a curiosity factor when you think Polynesian cuisine,” he said. “Being in Lantern Lane is fitting, a mix of heavy island food and light Asian food.
“We say Polynesian style is the heavy version of Asian food but everything is double the size.” Freshies is set to unleash the French and Chinese influenced cuisine that’s big on seafood, coconut, exotic fruit, ginger and lime in the first week of September.
“Eat to live and live to eat, so don’t be afraid to indulge,” he said.
