PREPARE yourself for a full stomach and a full heart because the Greek Vegan Bakery is coming to Newtown.
The cruelty-free plant-based bakery will be dishing up vegan versions of traditional Greek pastries and meals at 397 King St Newtown from Thursday.

Located in the heart of Newtown’s thriving vegan precinct, the business is the latest venture for passionate vegans, the Katsivardas family, who opened Australia’s first Greek Vegan Bakery in Revesby late last year. Their products have been so popular, they are now looking to open several more bakeries including in Bondi and Double Bay, said Pavlos Katsivardas
“We used to have customers driving two hours to Revesby to get our product. So after a lot of requests and the vegan market demanding a Greek vegan bakery, we’re opening in Newtown to start,” he said.
The Newtown store will be serving all the classics including yemista, bougatsa, moussaka (using mushroom mince and plant-based creamy toppings) and the famous spanakopita using spinach, leeks, dill and vegan feta cheese imported from Greece.
Pavlos said GVB uses Oliana vegan cheeses, made from coconut oil and sourced from Greece, to replicate the oozy cheesiness and flavours of traditional dishes.
“It’s not easy to find vegan cheese that is not put through a long process, but (Oliana) uses a very natural process, and for our products, it gives very good results,” he said.
Vegans will also be treated to seriously good coffee, with a special blend created by Flying Pig that’s designed to match dairy free milks
“The coffee is made specially for soy and almond milks, we’ll have Greek coffee and all the other coffees, so we’ve even taken the coffee to the next level for the vegans!”
Pavlos will run the Newtown shop with twin daughters Greta and Elina, while wife Fioroula and son Dimitris will run the Revesby bakery, which is GVB’s main production kitchen.
The Newtown cafe will be open Monday to Friday 8.30am-5pm. If there is demand, the family may expand weekend hours, he said.
