Perfect Plate 2022 competition in full swing

The dominance of chicken schnitzel at clubs across NSW has come to an end with a vegetarian dish voted the number one dish in the state by the public.

The 2022 Your Local Club Perfect Plate awards were held on Thursday night at Doltone House with first time entrants Cabra Vale Diggers scoring the top gong in the large club category with their Handmade Silky Tofu with Salted Egg Yolk.

Cabra Vale Diggers General Manager Michael Foulkes said he was going out on a limb entering a vegetarian dish into the competition, which sees the public purchase the dish and vote.

“I looked at the winners from last year and it was all lamb shanks and chicken schnitzel and I thought, there is more to club food than this,” he said. “The chicken schnitzel market is dying. What people want from us is diverse and quality food that is authentic.”

“I thought, if nothing else, I will get an award for bravery.”

The dish, which serves handmade tofu, is created by executive chef Stevenson Su and is the most popular vegetarian option on the menu at Horizon Asian Dining. It was only one of five vegetarian dishes entered and the only one to win.

Celebrity chefs Colin Fassnidge and Manu Feildel were ambassadors for the awards, with Fassnidge saying he was glad he didn’t have to pick the winners.

“The competition was fierce,” he said.

Fassnidge himself runs the kitchen at the CBD Club, The Castlereagh.

“After the turmoil the hospitality industry had faced in the past two years, Perfect Plate was a chance for club chefs to get creative, have some fun and work with their marketing and front-of-house teams to promote just how good club food can be,” Fassnidge said.

More than 142 clubs entered a dish into the awards, with over 48 000 Perfect Plate dishes purchased and voted on by the public.

For the second year in a row, The Fraternity Club in Fairy Meadow claimed first place in the medium club category with their dish of beef filled ravioli tossed in a portobello mushroom sauce.
